Ingredients

  • coffee, medium-fine16 g
  • water at 88 °C230 g

Method

Set up inverted

Plunger in a couple of centimetres, chamber upside down, coffee in.

Pour and stir

All the water at once, stir three times to break the crust.

Steep

Cap on with a rinsed paper filter.

Flip and press

Flip onto the mug and press slowly. Stop the moment you hear the hiss — that is air, and pushing it through adds bitterness.

Notes

  • As an espresso substitute: 20 g coffee, 60 g water, fine grind, 45 seconds, hard press. Not real espresso, but it holds up in milk.
