Phin drip over condensed milk, then ice
Robusta, a heavy dark roast and condensed milk. Bitter, sweet and stronger than it looks.

Ingredients
- sweetened condensed milk30 ml
- coffee, medium-coarse, dark roast20 g
- water at 95 °C100 ml
- ice150 g
Method

Condensed milk in the glass
Straight into the bottom of a heatproof glass.

Bloom the phin
Coffee in, filter press on top, 20 ml of water, wait 30 seconds.

Fill and wait
Top up the phin and cover. It should drip for four to five minutes. Faster means the press is too loose.

Stir, then ice
Stir the coffee and milk together while hot, then pour over a full glass of ice.
Notes
- Cà phê trứng (egg coffee): whisk one yolk with 15 ml condensed milk until pale and thick, float it on hot coffee.
Lighter version
The condensed milk is the whole drink, so there is no honest low-sugar version. What works instead: half the condensed milk, made up with unsweetened evaporated milk. Still sweet, roughly half the sugar, same texture.
