Cold brew concentrate

1:8 for 16 hours, then dilute to taste

Never heated, so almost none of the bitter compounds are extracted. Keeps a week and turns into six other drinks.

Ingredients

  • coffee, coarse grind125 g
  • cold filtered water1000 g

Method

Grind coarse

Coarser than French press. Fine grounds turn the whole batch muddy and hard to filter.

Wet everything

Add water gradually and stir until no dry pockets are left floating.

Steep in the fridge

14–18 hours. Room temperature works in 12 but is less clean and can start fermenting in warm weather.

Filter twice

Once through a mesh, then through paper or a cloth. Patience here is the difference between silky and gritty.

Dilute

1 part concentrate to 1–2 parts water or milk. Label the bottle with the date.

Notes

  • Nitro at home: a cream whipper with a nitrous charge, shaken and dispensed, gives you the cascading head without a keg.
