Caffè macchiato

Espresso stained with milk — nothing more

Macchiato means stained. One spoon of foam, in an espresso cup. If it comes in a tall glass with caramel, that is a different drink.

  • whole milk, textured15 ml

Method

1

Pull the shot into a warm cup

Warm cup. A cold ceramic cup drops a double espresso by several degrees instantly.

2

Texture a small amount of milk

Even 40 ml is hard to steam well — froth more than you need and spoon off the top.

3

Spot the crema

One dollop in the centre. You want a white dot on brown, and the crema still visible around it.

Notes

  • Macchiato caldo vs freddo: in Italy you can order it with hot foam or a splash of cold milk. Freddo is the older habit.
