Cappuccino

Thirds: espresso, milk, foam

A 150–180 ml cup, drunk before 11am, and never with a meal. The texture target is wet paint, not bubble bath.

Pull the shot first

Espresso waits better than milk. Milk keeps developing after you stop steaming.

Stretch for 3–4 seconds

Tip just under the surface. You want a soft tearing sound, not a shriek. Every second of air here is roughly 1 cm of foam later.

Roll and heat

Sink the tip and set the milk spinning. Whirlpool until the pitcher is uncomfortable to hold — around 60 °C.

Groom

Bang the pitcher once, swirl until it looks like glossy wet paint. If you can see individual bubbles, keep swirling.

Pour high, then close in

Start high to push milk under the crema, then drop the spout close to the surface to let the foam surface and paint.

Notes

  • Milk science: foam is protein-stabilised, and the sweet spot is 55–65 °C — that is where lactose reads sweetest and the foam is most stable. Past about 70 °C the whey proteins denature in earnest, the foam goes stiff and dry, and the milk starts tasting cooked.
  • Get the air in early. Whey proteins are flexible and mobile while the milk is cold, so all the stretching should be done before it passes roughly 35–40 °C. After that you are only heating milk — no amount of extra hissing will add usable foam.
  • Whole dairy is easiest. For plant milk, use one labelled barista — it has added protein or gums to imitate the same structure.

Lighter version

Semi-skimmed steams into a drier, stiffer foam than whole milk, and the drink loses very little — a cappuccino is mostly air and espresso anyway. Skimmed foams highest of all but tastes thin. If you want the cut without the fat, semi-skimmed at 55 °C is the sweet spot.
