Dirty matcha

Iced matcha latte with an espresso poured over

Ingredients

  • matcha, sifted3 g
  • water at 75 °C40 ml
  • cold whole milk120 ml
  • espresso36 ml
  • ice150 g

Method

Whisk the matcha

Paste, then thin with the rest of the water.

Build the bottom two layers

Ice, milk, then the matcha poured slowly over the back of a spoon.

Float the espresso last

Espresso is the densest of the three but the ice traps it, so pour slowly and it will sit on top for a minute or so.

Notes

  • Use a light-roast espresso. Dark roast bulldozes the matcha completely.
  • Barista oat is the best non-dairy choice here — it is sweet enough to bridge the matcha and the espresso without syrup.

Lighter version

Unsweetened oat, no syrup. The espresso brings the bitterness and the matcha brings the body, so this one survives losing its sugar better than almost anything else here.
